    I've posted this before but I made it again tonight after checking the draw summaries and had some leftover elk steak from Sunday and took pictures this time! I use recipes like I read a map; close enough to get where I'm going!!! Try this for your Memorial Day get-together or with the leftover steak on Tuesday...


    3 medium onions, finely chopped
    1/4 cup butter (more doesnt hurt, except for the arteries)
    6-8 ounces of elk, deer or if you suck, beef steak, thinly sliced
    1 tsp all-purpose flour
    1 tsp cayenne pepper
    1/4 tsp salt or garlic salt or whatever
    1/2 cup beef broth
    1 tube (16.3 oz) large refrig flaky/layered biscuits
    3/4 cup shredded mozzarella cheese
    1/3 cup grated parmesan cheese

    In a large skillet, cook onions in butter over medium heat 10-12 minutes or until very tender. Remove and keep warm. In same skillet, cook steak for 2-3 minutes or until tender.
    Return onions to pan, stir in the flour,cayenne, and salt til blended; gradually add broth. Bring to boil;cook and stir 4-6 minutes til thickened (think roux or a meat gravy texture)
    Seperate biscuits , split each horizontally into three portions. press onto and up the sides of ungreased muffin cup pan. Fill each with game mixture and add some shredded mozz cheese and sprinkle with parm cheeze. place other sections of biscuit dough on top (dont worry about sealing it all in, the cheese and bread will seal good enough!)

    Bake at 375 for 12-15 min or until golden brown. Let stand for 2 minutes and serve, preferably with beer and no vegetables.

    Those look freaking good! Shocked drink

    I ate elk tonight too...elk tacos that is!!!! Just used some burger I like to use up before it gets old.
